COCONUT POUND CAKE
~ Forget the pounds, just eat the cake!

1 cup unsalted butter
3 cups sugar
6 organic eggs
3 cups flour
1/4 tsp. baking soda
1/4 tsp. salt
8 oz. sour cream
1 cup coconut
1 tsp. vanilla
1 tsp. coconut extract
  • Preheat oven to 350-degrees.
  • Mix butter, sugar and eggs until creamy.
  • In separate bowl, combine flour, baking soda and salt. Add to creamy mixture. Add remaining ingredients and mix well.
  • Spray bundt pan with Pam. Pour mixture into pan and bake for 1 hour.

  4. Our Hydrangea Macrophylla planted outside produced a lot of very healthy leaves but only very small and few heads of flowers so I dug them all out. Maybe I should try planting and keeping them in pots as you have done? They are very lovely plants and there are some very interesting colors and mop head shapes now so I've always admired people who could grow them.

  5. Mmmm, Coconut pound cake...it's too dreary here to work outside; maybe I'll have to bake a cake instead.
    I love hydrangeas, too; yours is beautiful--what variety is it? In response to Ki, I think hydrangeas are rather particular about where they like to live. I transplanted mine when we moved, and they haven't been very happy since.

  6. Dearest Cat ... big thanks! My sunporch (in the photo above) was once a simple screened porch when we moved in 33 years ago. Fun project last year when we ripped out old windows and replaced ... an evolution throughout the years living here. It's where I shoot many indoor photos because of the natural light. A bite of coconut cake sitting there feeds the body as well as the soul :)

    Hey Ki ... although I have several Hydrangea Macrophylla growing in the garden (nowhere near blooming), this is a plant purchased at the local greenhouse to cheer a 'soulless room'. Read my note to Rose below about my favorites.

    ... and Rose. I agree, hydrangeas are rather particular about where they like to live, especially macrophylla. I have several in the garden but my favorites for zone 5 are Oakleaf, Annabelle, and Tardiva (who never let me down).
