AUGUST ABSTRACT (ZINNIA/VERBENA) ~ GRILLED POUND CAKE with BALSAMIC PEACHES

(Zinnia & Verbena)

GRILLED POUND CAKE with BALSAMIC PEACHES
~ uniquely different and summer delightful!

4 1/2 Tbsp. (packed) golden brown sugar
3 Tbsp. balsamic vinegar
2 Tbsp. chopped fresh mint
6 ripe large peaches, peeled, cut into 1/2-inch thick slices

1 cup chilled whipping cream

6 slices good pound cake
3-4 Tbsp. room temperature unsalted butter

  • Prepare grill (medium-high heat).
  • Whisk 3 Tbsp. sugar, vinegar, and mint in large bowl to blend. Add peaches and toss gently to coat. Let stand at least 5 minutes and up to 30 minutes.
  • Beat whipping cream and remaining 1 1/2 Tbsp. sugar in another bowl until peaks form; refrigerate.
  • Spread cake slices on both sides with butter. Grill until lightly browned. Arrange cake slices on 6 plates. Top each with peaches and syrup, then whipped cream.

  2. Dearest Joey, Is this not indeed the problem with so much in life today, the need to analyse and 'understand' rather than simply to accept and enjoy and, as Monet says, love? Of course one wishes to encourage, and take part in, serious thought where appropriate but there are some things which, I believe, can be enjoyed per se.

    I do not need myself to have followed the delicious receipt which you publish today - it would be more than enogh to taste, love and enjoy!!

  5. Joey, never have I thought of a grilled pound cake! Claude Monet is one of my favorite artists not only for his gardens and landscapes obut for his depiction of the women and children in his life.

    Hi Rosey. A delightful and bit differnt twist for peaches, something your discerning palate might enjoy :) I do make my own pound cake and have lots of recipes posted. Occasinally for trifles, I use Sara Lee frozen.
