FALL ABSTRACTS
(AUTUMN LEAVES)

PEAR TARTE TATIN
~ Delightful and easy autumn dessert from A Taste of the Canadian Rockies Cookbook (Lake O'Hara Lodge, Yoho National Park)

5-6 peeled, cored and sliced pears
4 Tbsp. butter
1/4 cup sugar
cinnamon to taste
nutmeg to taste
12-inch pie pastry (1/8 inch thick)
Whipping cream
- On stovetop, in an oven proof skillet, melt butter. Add sugar and caramelize (be careful as sugar burns very easily). Remove from heat. Add pears, sprinkle with cinnamon and nutmeg. Cover with pie pastry and with paring knife stab vents through pastry top.
- Bake 10 minutes in preheated 400-degree oven, then reduce heat to 375-degrees and bake for 20 minutes.
- Using oven mitts on both hands, remove from oven, invert large platter over skillet, turn skillet and platter over together sot that tarte is now on platter, pastry side down. (Watch for hot caramelized sugar that may leak over edges of platter.)
- Cut and serve with whipped cream. (8 servings)

ReplyDeleteJoey, I love your choice of Stanley's poem. It is so easy for me to see that way too. Your mosaics are so lovely!! Your first one here really draws me in deeper. I feel like I am high in a tree looking down on a landscape. Thrilling feeling with my mild vertigo! I could be falling, flying or floating like a leaf. After this feast for the eyes and imagination you then nourish the body with delights ... yummy! Wonderful post as always! You are such a talent dear Joey! Such a treat to visit you. ;>)

ReplyDeleteExceptionally gorgeous mosaics today, Joey, and that's saying something. They're like stained glass windows of nature. The tarte sounds divine, but with my luck, it would either stick despite my best efforts, or it would come out in a lumpy mess. But a pear tart sounds like a nice treat for this weekend...hmmm, how to adapt this...

All of these fall pictures are beautiful,but they are getting me a little depressed. It's going to snow here this weekend.
ReplyDeleteI love pear tarte tatin; I much prefer it to traditional apple. I usually add a splash of Calvados to mine. I also make a banana one with a tot of rum!
ReplyDeleteAs ever, I love your photos. The sky kind of looks like water to me in these, which is a cool brain trick. I also like the quote that describes autumn as a mosaic, which fits with the season in general and your collages in specific.
