SIMPLE GRILLED SALMON
1 huge 3 pound slab of Costco FRESH FARMED ATLANTIC SALMON
(product of Chili~ color added through feed - an additional quandary to make you wonder ... hum)
3 Tbsp. Dijon mustard
3 Tbsp. soy sauce
3 Tbsp. olive oil
3 cloves minced garlic
1 heaping tsp. dried thyme
1 heaping tsp. dried rosemary
juice of 1 fresh lemon plus the zest
Combine the above and slather over salmon for 30 minutes or until ready to grill it. Plunk the salmon on a hot covered grill for at least 8 minutes or longer, depending on thickness. Don't overcook. Though slightly red in center, it keeps cooking as it sets. You can always put it back on the grill ...
SIMPLE STEAMED CARROTS AND SWEET PLUMP SUGAR SNAP PEAS
( carrots rich in antiocidants & Beta-carotene -- snap peas (Vit. A)
If not organically grown, peel carrots. Diagonally slice 2- 3 per person. Place in pot filled with 2-3 inches water. Sprinkle with a dash of sugar to enhance flavor.
Bring to boil and simmer 8 minutes. Add a handful sugar snap peas per person. Simmer 5 minutes until cooked yet crisp. Drain. Season with a few tablespoons of butter, cracked pepper and coarse salt to taste.
