MONDAY MUSING (MARDI GRAS - 'A BUTTERFLY OF WINTER') ~ FIERY LEMON CAJUN SHRIMP

FIERY LEMON CAJUN SHRIMP
~ a delicious real New Orleans, peel & eat, treat

1 1/2 cups unsalted butter
4 cloves minced garlic
2 Tbsp. fresh rosemary
3 Tbsp. Worcestershire sauce
1 Tbsp. Tabasco sauce
1/4 cup lemon juice
2 Tbsp. coarse cracked black pepper
1 tsp. sea salt
3 lbs. unpeeled large shrimp
2 thinly sliced lemons
French bread
  • Preheat oven to 400-degrees.
  • Melt butter in saucepan over medium heat. Remove from heat and stir in garlic, rosemary, Worcestershire, Tabasco, and lemon juice. Add salt and pepper.
  • Pour half of sauce in bottom of large shallow baking dish. Layer with 1/2 of the shrimp and 1 thinly sliced lemon. Repeat with second layer of shrimp and remaining lemon slices. Pour remaining sauce over dish and bake, uncovered for 20-25 minutes, turning once halfway through, until shrimp turn pink.
  • Place in center of table (with bowls for discarded tails), offering plenty of French bread for dipping into the spicy sauce. (serves 6)

That is the most beautiful collage. I had no idea Mackinac Island had a butterfly conservatory. I would love to spend some time there.

Thanks for this glorious collage, Joey. It's such a day brightener as I watch the blowing snow outdoors. We're having a frigid day with strong winds. Ugh!
My only regret is that your collage won't enlarge when clicked.
If only we could get good shrimp here, but if it's to be had I haven't found it yet. This dish sounds delightful.
I hope your weather is more pleasant than ours :)

Hi Joey, anything that begins with garlic and butter has to be good. The butterflies are lucious as the dish sounds too. I like that thought of this time of year being the final tattered butterfly of winter. We are ready for fresh ones!

Ah yes, Frances ... butter & garlic! When teaching a children's cooking class, students teased me ... "You put garlic in everything ... except maybe cookies!"
