'LEAFY' JUNE ... (BRUNCH ON THE PORCH) CURRIED TURKEY SALAD with WALNUTS & GRAPES / PARMESAN PITAS

CURRIED TURKEY SALAD with WALNUTS & GRAPES

3 lbs. cooked turkey breast or tenderloins

(Poach breast gently in bath of water, carrots, celery, pepper & onion for 1 1/2 hours or 25 minutes for tenderloins and allow to rest in liquid until cool)

1/2 lb. toasted walnut halves (save some for garnish)

2 lbs. halved seedless red grapes

4 sliced bananas

CURRY MAYONNAISE

2 cups Hellman's mayonnaise

1 1/2 Tbsp. curry powder

2 Tbsp. mango chutney

1/4 tsp. cumin

1 tsp. dried basil

1/4 tsp. cayenne pepper

1 Tbsp. white wine

juice and zest of 1 plump juicy lemon

freshly grated black pepper to taste

  • Tear turkey into chunks or strips.
  • Mix mayo/curry dressing.
  • Toss turkey with dressing. Add toasted walnuts and grapes. If not serving immediately, refrigerate.
  • Just before serving, add bananas and reserved toasted walnuts. Great served with PARMESAN PITAS (slice Pitas in half and pull apart. Slather all sides with butter and liberally sprinkle with Parmesan cheese and cracked pepper. Place under broiler until bubbly brown.)

Coming from a long line of fabulous French cooks, Mother was indeed my inspiration and though gone for over 30 years, she remains near both in the garden and kitchen and joyfully lives through my creative children who also inherited her culinary gift.

I paint the garden with hostas and can't even begin to count the many varieties, Beckie. Once (eons ago) I had a handle on all the names. After years, digging and dividing, I can barely remember my own name ;)

Good to hear from you Di ... Can't get my fill of strawberries either. Once in awhile, I nibble on them dipped in powdered sugar. Funny but of the many shortcake recipes I've tried, the family favorite is still off the Bisquick box!

And that beautiful leafy collage! :) It's wonderful isn't it... when you garden long enough to realize the "green" ~the fabulous foliage is as or even more important and beautiful than just the flower's!:) And another mouth watering recipe! Yum, I love walnut's and grapes, & turkey,& curry & pita bread...making me hungry! :D

This has been a favorite for many, many years, Cat. I have been 'a green gal' for many years. The only annuals in my garden (except for herbs and gerbera daisies) are in pots.
