'FAREWELL WINDOWS ... HELLO MAC'! (NEW YEAR'S RESOLUTION) ~ CAROLE'S TRADITIONAL NEW YEAR'S PORK & SAUERKRAUT

CAROLE'S TRADITIONAL NEW YEAR'S
PORK & SAUERKRAUT
~ a New Year Day MUST for my sister's brood

6 lbs. lean boneless pork roast
favorite sausages and or kielbasa
4 bags good sauerkraut (from refrigerated section)
4 sliced onions
garlic powder or minced garlic to taste
1/4 cup good olive oil
2 heaping Tbsp. brown sugar
1 large diced apple with peel
1 quart organic chicken broth
1/2 cup white wine, sherry, or beer
coarse salt & freshly ground pepper to taste
red skin or Yukon gold potatoes, well scrubbed with jackets on

  • Preheat oven to 325º. Spray roaster with olive oil and layer undrained sauerkraut in bottom (rinse sauerkraut for less sour taste).
  • Sprinkle pork loin with meat tenderizer and pierce all over. Sprinkle with garlic powder or cut slits in roast and tuck in garlic cloves. Brown roast in heavy skillet and transfer to roasting pan. Bury roast in sauerkraut. Add onions and apple . Sprinkle all over with brown sugar, salt, and cracked pepper. Drizzle a few drops of olive oil over top. Add broth, wine, sherry or beer. Cook, covered, for about 2 1/2 hours. Check periodically to make sure juice is not all absorbed and add more if needed.
  • The last hour of cooking, add sausages and the potatoes.
  • Serve with applesauce, black-eyed peas (for good luck), succotash, Waldorf salad and vegetables of choice, like carrots, squash or peas. (Serves a crowd)

I'm making pork loin tonight, but this sounds like a great recipe.

I switched from a PC to a MacBook last year and so glad that I did. I know that you'll enjoy yours.

Those windows (Duke) are near me! :-)

I recently read the book The Guernsey Literary and Potato Peel Pie Society and there is mention in the book of Charles Lamb and his writing. The story takes place after the Second World War. I'm guessing it's the same Charles Lamb as the quote you posted.

I can smell the sauerkraut where over here. Yum!

Enjoy your new computer! I started out with a Mac, but then went to PC's after that because back in the 90's Mac software was limited. But I know so many people who swear by Mac's these days.

Loved your "blue moon" post yesterday. Beckie and her husband celebrated New Year's Eve with us. She and I stepped out late to see the moon--it was so bright it lit up my whole yard as if street lights were on.

Hi Cameron ~ Santa gave me a new scanner for Christmas and this pic is an OLD shot (in NC for a wedding and tour of Duke) that I had in my office called Windows '95(loved the shot both inside & out of the widow). Yes, dear Bren ~ heartfelt wishes for a beautiful New Year for all! Spring is right around the corner (though hard to imagine looking at the frozen lake and mounds of snow here at the lake) but I know this too will pass (in the meantime, I'm doning snowshoes and warming toes by the fire :)

I am so excited to hear about your switch from windows to Mac. I've been using an iMac for the past several 7 years, but the power supply went out recently and I have a new MacBookPro in my future.

Hopefully we can exchange computer stories.

Hi Joey! No way... you have a new Mac?? I love Macs. That's all I'd ever used (being an elem. teacher) until my Power Mac got "outdated." So, having to purchase my own new computer (without an income), I purchased a PC. I'm getting by, but... oh, I love the idea of a Mac again, someday! :-) Happy New Year!!

Happy New Year, Joey! Love your recipe. We like to have pork in these cooler months. There's a saying here that in the months with no 'r' in them one shouldn't have pork. And it's in the heat of the r-less(LOL!) months from May-August we don't have...only once in a while. So we make up for those months now:)

And Happy New Year wishes to you, Kanak! Your pork message sounds much like the avoiding oysters in any R month myth! Though not a huge meat eater, do love lean pork though not roast pork in warm months ... then, we grill (pork tenderloins), which enjoy all year round.
