THE SENSES ALIVE ~ HAM, ROASTED PEPPER & PESTO GRILLED PANINI

HAM, ROASTED PEPPER & PESTO GRILLED PANINI
~ Delicious sandwich with leftover Easter ham

8 slices coarse multi-grain bread (or sour dough)
1/3 cup light mayonnaise
2 Tbsp. pesto sauce (good jar is fine)
thinly sliced ham
1 (12 oz.) jar drained and thinly sliced roasted peppers
4 thin slices provolone cheese
4 thin slices cheddar cheese
  • Combine mayo & pesto sauce. Spread evenly on 1 side of each slice of bread. Place 4 slices face down on wax paper.
  • On inside of the 4 slices, layer each with 1 slice provolone cheese, thin slices of ham, bell peppers, and cheddar. Top with remaining bread, pesto side up.
  • Cook sandwiches in panini pan (or on hot griddle) until golden brown. (4 servings).

OH YUMMY!!!!! I love Pesto ( had it on my bread tonight at dinner!) Can't wait to try this recipe on the grill the next nice weekend we have.

We prepare and eat a lot of pesto here, dear Bren. In fact, it's one of Mr. Ho-Hum's favorite things to make besides creating a panini!

So-so here today, dear Kerri but there is sunshine in my heart (how's that for remaining optimistic :) Do hope the sun is shining down upon you!

Unfortunately, all the leftover ham stayed with my mother who cooked our Easter dinner:)
Just catching up on posts after a busy Easter weekend, Joey...your Easter parade of flowers was just beautiful. And thank you for posting the story of the dogwood. I know I've read this some time in the past, but I had forgotten it. Such timely posts for the important religious holidays this past week.

Love your photos! What wonderful color on the blooms. I usually see florists azaleas here this time of year but so far haven't seen any.

Like you I wish we would have a warmup. Highs of 40-degrees aren't very springlike.

This azalea was most unusual, Marnie, and caught my eye. Certainly not one I would choose for outside but lovely to look at close up. Today is horrid ... cold & rainy :(

Perfect idea for the leftover ham! Never thought of using pesto on it. Still pretty cold here in NY too. (Sigh.)

Spring IS messing with me, Gail :( It's cold and rainy (a good day to work on my book). I'm sure the Forman grill works fine ... as does a griddle topped with an iron skillet.

Sigh indeed JGH! This is getting OLD ... one of the coolest April's I can remember.
