FRIDAY FISH FRY ~
OVEN-FRIED LAKE SUPERIOR WHITEFISH
(easy, crisp, moist and tender)
~ adapted from Hollyhocks & Radishes
2 pounds Lake Superior Whitefish
1/2 cup part olive oil - part vegetable oil
1 tsp. coarse salt
2 cloves minced garlic
1 cup grated Parmesan cheese
1 cup dry seasoned bread crumbs
Marinate fish in oil, salt, garlic and cracked pepper for 20 minutes.
Preheat oven to 500 degrees. Line a baking sheet with foil.
Remove fish from marinade and roll first in cheese and then bread crumbs.
Place on prepared baking sheet. Bake 12 minutes or until fish begins to flake.
Serve with lemon wedges and tartare sauce or ~
LEMON CAPER BUTTER
Melt 6 Tbsp. unsalted butter in saucepan.
Add 1 Tbsp. drained capers or more to taste.
Finish with juice of 1 lemon and zest.
