IN HONOR of MOTHER'S DAY ~ WALNUT GLORY CAKE

WALNUT GLORY CAKE
~ Mother's favorite cake

3/4 cup flour
2 tsp. cinnamon
1 tsp. salt
9 room temperature egg whites (1 1/4 cups)
3/4 cup sugar
9 egg yolks
2 tsp. pure vanilla
3/4 cup sugar
2 cups finely chopped walnuts
walnut halves to decorate
  • Preheat oven to 350-degrees.
  • Combine flour, cinnamon and salt. Beat egg whites in large mixing bowl until soft mounds form. Gradually add sugar and continue beating until very stiff (stiff peaks form). Do not underbeat.
  • Combine egg yolks, vanilla and sugar n small mixing bowl. Beat until thick and lemon colored. Stir in dry ingredients.
  • Fold batter gently but thoroughly into egg whites using a wire whip or rubber spatula. Fold in finely chopped walnuts.
  • Turn into ungreased 10-inch tube pan. Bake for 55-60 minutes. INVERT IMMEDIATELY. Cool completely before removing from pan. Frost with a vanilla glaze, sprinkled with confectioners' sugar or serve with whipped cream. Decorate with walnut halves.

And lily of the valley is my favorite flower, even though I'm addicted to daylilies. I love the scent of those tiny white lilies.

I too love the scent of Lily of the valley (my bridal bouquet). Mother was beautiful, Jane Marie. Though gone for 33 years, she is never far away.

What a great tribute, Joey--and it's pretty obvious where you get your beauty. Your mother was a very beautiful woman! (And apparently a good cook, too... you really were lucky in the genetics department,weren't you?!) :)

Well she looks like a movie star! I was just given some Lily of the Valley and it is doing nicely in my new shade gardens. And...as you wished me a happy 50th--my Aunt made me a coconut black walnut cake this weekend. Good thing she made it before the power went out! It is a family recipe too. My aunt is the last living member from that generation. I cherish their memories.

You really honored your mom today and I'm sure you are carrying on sweet traditions she would be proud of.

Gosh, Joey, your mother is as pretty as my mother ... they look a lot alike. My mother was gorgeous and so was her husband. They looked like movie stars out of the F Scott Fitzgerald era. If they only had the Fitzgerald money, they would have lit the world on fire ... Mom would have loved all the fanfare. Dad was more handsome than Clark Gable. What a handsome couple they were. Hope yours were as charming a couple as mine were.

Oh, by the way, my Mom loved Lilies of the Valley, too ... and Lilies of all kinds ... and Cosmos.

Loved your tribute to your Mom. I'm sure she deserved it. And you are a pretty good Mom yourself ... and a grandmother, too. Seems you have a delightful family.

You have a beautiful Blog. Lots of loving care went into it, I can see that. Oh ... and your photographs are supurb. You should have them in a book. I'd buy one ... let me know if you ever do one.
